This is a simple ratatouille recipe I came up with while salivating over my family's pasta every week. I actually enjoy this even better than regular pasta!

1 Eggplant, peeled and diced
2 small zucchini, sliced thick
1 red bell pepper, cut into chunks
1 green bell pepper, cut into chunks
1 small onion, sliced
2 cloves garlic, minced

Place all ingredients in sauce pan with water filled to about 1/4 of the pan. Steam vegetables until tender, about 20 minutes. Do not over cook, as the vegetables will become too soft and mushy.
Drain and serve with your favorite pasta sauce. I always use a homemade pasta sauce. Sprinkle with cheese.
